Dr. Marco’s research examines microorganisms for their contributions to altering food safety, food quality, and gut health. A common thread to her research is the investigation of the ecology and genetics of lactic acid bacteria (LAB) in food systems and the mammalian digestive tract. This interest encompasses coffee fermentations and the impacts of coffee on the microbiota in the human digestive tract.
